We had a snow day today. Its was the perfect snow. Light and fluffy, and it snowed all day, huge swirly flakes. The whole town came to a standstill and it was so peaceful. After shoveling out, we pulled on our boots and traipsed thru a foot of snow to the food co-op to get everything we needed to make a Snowy Day Pasta with Walnut and Ricotta Sauce, and another Garlicky Salad. The perfect dish for a perfect day.
Walnut and Ricotta Sauce:
- 1/4 C Olive Oil
- 4-6 cloves of garlic
- 1 C walnuts
- 1 C parsley
- 1/4 c parmesan cheese
- 1/2 tsp salt
- Black pepper
- pinch of nutmeg
- 15oz whole milk ricotta cheese
- process the olive oil and garlic in a food processor until a smooth paste
- add walnuts, parsley, parmesan cheese, salt, pepper, and nutmeg, and blend until smooth
- stir into ricotta cheese
Toss with 12 ounces Tinkyada Pasta Joy rice pasta
Garlicky Salad:
- 2-4 cloves garlic
- 2-3 Tbs olive oil
- 1/4 tsp salt
- black pepper
- parmesan cheese
- chop the garlic finely
- pour olive oil in the bottom of a large salad bowl
- add garlic, salt and pepper
- chop a large head of Romaine lettuce and toss in the bowl
- sprinkle with parmesan cheese
